I could honestly eat pizza every single day, and this pizza chaffle is a pizza I can have “on the go”, since all of the ingredients are baked into it. The taste reminds me of pizza-flavored goldfish crackers. You can also use it as a bun around a patty made from Italian sausage. Add a slice of provolone and some pepperoncini slices for a mouth-watering keto pizza burger.

Ingredients

  • 1 large egg, beaten

  • 1/2 cup shredded mozzarella

  • 1/4 tsp Italian seasoning

  • 1 tsp tomato paste

  • 1 TB almond flour

  • 12 pepperoni, chopped

Directions

  • Mix all ingredients.
  • Pour half the the batter into a mini waffle maker, or the entire batch into a double waffle maker.
  • Cook for about 3 minutes or until you no longer see steam coming from the waffle make. Remove chaffle to a cooling rack.
  • If using a mini waffle maker, repeat steps 2 and 3.

    changed my life. And that’s not hyperbole. I have been so desperately bored with food lately. I really like the basic chaffle, but this. THIS. It’s easy, satisfying, and delicious. And different. By the way, I am a new subscriber to your channel and I’m loving your recipes and blog/vlog. Up next: the crab cake chaffle. I would also LOVE to see some recipes using duck confit. Pre-keto, I used to make a delicious cassoulet (in the instant pot) but that’s not keto. I have a giant tin of 4 (surprisingly) delicious Rougie duck confit legs that are begging to be used. I need easy recipes but I also would be game for trying your keto-adapted recipes for more gourmet meals as well. Well, my husband is the cook, so I’m interested in asking him to try cooking them 😀

  4. Great recipe. I use Cracker Barrell Baby Swiss, which is very mild as well. It reduced the total carb count by 3-4 compared to mozzarella cheese.

  5. Steve! Thanks much for this! I made them on a spur of the moment for lunch and the ITA seasoning made the flavor great! I need to figure out how to make them even crispier after the waffle maker… maybe a stint in the air fryer after frozen would work?

    • I’m wondering if a little oil might help it crisp up. Waffle batter, I have discovered, contains twice as much fat as pancake batter so that it can “fry” in the waffle iron. If you give it a try, please let me know.

  6. Thank you for your recipes! I have just started waffling! I’ve been enjoying the self-contained pizza and I changed the almond flour to parmesan cheese, works for me. Almond flour with cheese kinda turns my stomach. I used a tsp of Contadina Pizza Squeeze sauce because I didn’t have tomato paste in a tube. Easy!

    Oh my gosh!! These are FANTASTIC!!! So quick and easy and so YUM!!! I made plain chaffles over a year ago a few months into my keto journey and they were meh! I got the little round waffle maker and that made them better but I had only used it one time in 7 months. After trying this recipe and looking at all the others here I may have to get a second waffle maker to keep up with my demand! 🤣🤣🤣🤣 Hubby’s not keto but he might even like some of these.

  9. Thought I would try this, first one was great! The second I topped with Rao’s pizza sauce, more mozzarella, pepperoni and Italian seasoning, I put in the air fryer for 5 minutes at 400. Better than Pizza Hut!!!! Super awesome!!!! Can’t wait to make this again!
