From the time I posted my first chaffle video on YouTube (and ever since), I’ve gotten viewer comments saying things like “I hate eggs” or “I can’t get past that eggy taste” or “can you make a chaffle that doesn’t taste like eggs?”.

The answer is “yes” — with my “egg buster” batter. First, we remove the yolk. To make up for the lack of volume, we use two egg whites. Then we have a few ingredients that (in my experience) neutralize the flavor of eggs: psyllium husk powder, nutritional yeast, and stevia. The stevia is optional — it’s not there to sweeten the chaffle, but it does further cut down on any eggy flavor.

This chaffle also has a great texture and is hearty enough to use as a sandwich bread or hamburger bun.

Ingredients

  • 2 large egg whites

  • 1/2 cup shredded mozzarella

  • 1 TB psyllium husk powder

  • 1 tsp nutritional yeast

  • 1 Pinch of sea salt

  • 3 drops liquid stevia (optional)

Directions

  • Mix all ingredients into a batter.
  • Use a spoon or spatula to place half the batter in your mini waffle maker and spread out as much as you can to fill the disc.
  • Press down firmly on the lid and cook until you no longer see steam coming out of the waffle maker (about 5 minutes). Remove the chaffle to a cooling rack.
  • Repeat steps 2 and 3 for the second chaffle.

  1. These are AHMAZING Steve…thank you so much for this egg buster chaffle. I just made these by doubling the ingredients for the new DASH NO MESS waffle iron which made me 4 chaffles at once. I weighed 100 gm of liquid egg whites for those people using the egg whites in the carton. (In my case, I doubled it to 200 gm).
    My only IRK from being on keto for a year now is spending so much time in the kitchen. So, any gadget or recipe I can buy or make and freeze for another meal has my full attention.
    BTW, your web site is spectacular. Oh, as an aside, don’t know if you would be willing to “take one for the team” again, but just got the INSTANT (POT) VORTEX PLUS AIR FRYER. Excellent so far. Vids reviewing Air fryer keto foods would be great, this brand or not.

      I already have an Instant Pot and a Phillips air fryer, so that won’t be on my list of reviews. Glad you like the website, it’s still under construction…

  2. My apologies for being a comment hog but, had to share these. Added 1 T. Pumpkin puree and 1 tsp. Pumpkin pie spice…oh my goodness, it’s Fall. Cream cheese frosting on top. I’ll go and sit in a corner now.

  3. Deni. You should seriously try SeriousKeto’s pumpkin pie chaffle! The pie filling is decadent and also good as a spread on top and w the candied pecans (also SK), they are as good as any non-keto gluten filled pumpkin bread I have ever eaten!

    I, too, had an air fryer and loved my Instant Pot, but found new homes for them and got the Ninja Foodie to be able to truly dehydrate cranberries and blueberries to chop for muffins and flavored chaffles (bought cranberry flavoring) for the sweet waffle chaffle and am very happy w it ☺️

  5. Can these be made without nutritional yeast or will it change the results? I’m not a fan.

  6. I don’t have psyllium husk powder, and with the social distancing thing and being a senior with lung issues I’m not going out. I DO have almond flour, coconut flour, oat fiber, guar gum, xanthan gum, ground golden flaxseeds and unflavored pea protein powder. Would any of those work for a replacement?

  7. My first Chaffle — OUTSTANDING!! I don’t like the taste of eggs, so made this with cheddar (only cheese in the house). I am super happy. Thank you for getting this perfect. I also added garlic salt and pepper. Upward and onward!

  8. 1st chaffle I have ever made. Mixer very thick, hard to mix up. It seemed a little rubbery. Is that the way it is or did I do something wrong. Mixed, doubled, all ingredients. Stirred up and combined as well as I could. It was still very dry, did not come together, Divided and cooked in waffle maker till it said it was ready. I enjoy your channel. I have a feeling you know what you are doing and so feel confident trying your recipes. I also have a grandson I have raised 3rd year in college. It’s awesome seeing them grow up to be responsible young adults.

  10. I was worried that I was going to have very dry chaffles like the previous woman did. The batter was not liquid-y like yours, Steve (and my batter was dark brown), and my mozzarella was shredded but it was the big shreds. But they taste good and look beautiful! I took a picture but I don’t see where I can post it. That’s okay, I just wanted to let others know to follow the instructions and the batter doesn’t have to look exactly like Steve’s. Also, mine took 7-8 minutes before they stopped steaming but they are perfect and not burned so I’m glad Steve gave us that rule to follow. Thanks, Steve! No More Eggy Chaffles!

  11. Love your show. Google won’t likely let me speak, as they are too dumb to know I have an acct, and are constantly bugging me…..
    Just began my love affair with chaffle today, after seeing this one on youtube. My wee iron does not arrive till later, so i simply tried to make them thin and in a fry pan. Delish.
