Scotch eggs are, hands down, my favorite pub food. In restaurants and pubs, they are typically coated in bread crumbs and deep fried. My version uses a keto “breading” of cheese and pork rinds that, when cooked, gives the same crispy exterior as deep frying.

Ingredients

  • 3/4 cup shredded sharp cheddar (60g)

  • 1/3 cup pork rind panko (30g)

  • 1 lb breakfast sausage (448g)

  • 4 large hardboiled eggs

Directions

  • In a food processor, pulse the shredded cheese and pork rind panko 15-20 times or until you have a uniform, bread crumb like texture. Place in a shallow bowl and set aside.
  • Divide the sausage into four portions and wrap around each of the four hard boiled eggs. It is much easier to do this if you first roll out each portion of sausage between plastic wrap. See the video for a visual explanation.
  • Roll each sausage wrapped egg in the breading from step #1 and press into the sausage so that it sticks.
  • Cook the Scotch eggs in a preheated air fryer at 390F (200C) for 15 minutes, flipping them over at the halfway mark. Alternatively, cook in a convection oven at 425F (220C) for 20 minutes.
  • Serve sliced in half with brown mustard or the dipping sauce of your choice.

  2. If I don’t have an air fryer or convection oven, but have a deep fryer.. can that work? If so what amount of time?

  4. I don’t have an air fryer either. I deep fry mine and they’re wrapped in prosciutto instead of breadcrumbs. Always on the search for a good Scotch egg though… I’ll have to figure out a way to do this one. Sounds good.
