This is a recipe I originally saw on Milk Street TV. I’ve tweaked it a bit to make it keto and opted for a cleaner oil than the peanut oil they used. The resulting sauce is an absolute umami bomb of a condiment that works great on beef, chicken, seafood and even vegetables. Despite the fish sauce it contains, it DOES NOT taste fishy.

Ingredients

  • 5-6 scallions, both white and green parts finely chopped

  • 1 tsp ground black pepper

  • 1/4 tsp kosher or sea salt

  • 1/4 cup neutral oil (60mL) *see note below

  • 1.5 TB grated ginger

  • .5 TB allulose or other non-sugar sweetener

  • 1.5 TB fish sauce, soy sauce or coconut aminos

Directions

  • Finely chop both the white and green parts of 5-6 scallions and place in a heatproof bowl large Pyrex measuring cup. For me, this was approximately 1 cup, unpacked.
  • Add the salt and pepper, and using your fingertips, massage into the scallions until they start to wilt.
  • Heat your choice of neutral oil until it begins to shimmer, then pour over the scallions. They will sizzle briefly. Stir together.
  • Stir in the ginger, sweetener, and fish sauce / soy sauce.
  • Serve over the protein of your choice.

Notes

  • Nutritional information is based on a serving size of approximately 2 tablespoons
  • For the neutral oil, you could use avocado oil, MCT oil, or peanut oil. If you plan to use this condiment on shrimp or chicken, coconut oil will add a nice bit of extra flavor.

    Excellent! Put on steak and stir fry veggies. This is right up there with Bang Bang sauce. You should try that!
