Armadillo eggs, are cheese stuffed jalapeños, wrapped with sausage and bacon, then smoked. That description alone should be enough to sell them. ’nuff said.

Ingredients

  • 6-9 jalapeños (depending on size)

  • 4 oz softened cream cheese (115g)

  • 4 oz shredded cheese, such as cheddar (115g)

  • 1/4 tsp ground cumin (optional)

  • 1 lb pork sausage (453g)

  • 6-9 slice of bacon (same as # of jalapeños)

  • 1 TB keto BBQ rub (optional)

Directions

  • Slice off stem end of the jalapeños, then remove the seeds and veins. This can be done easily with jalapeño corer. Set aside.
  • Combine softened cream cheese, the shredded cheese of your choice and (optionally) the cumin with a spatula until the consistency is uniform.
  • Fill the jalapeños with the cheese mixture, either using a spatula or piping bag (see video to see how I create a makeshift piping bag).
  • Wrap the peppers with ground sausage. It’s okay if some jalapeño is exposed, but make sure the cheese end is covered. Then wrap each pepper with a slice of bacon, securing it with a toothpick. Optionally, sprinkle each side with my keto BBQ rub.
  • Place in a smoker, preheated to 250F (120C) and smoke with your choice of wood for 2 hours.

  2. can you offer oven baking instructions for those without a smoker ? yes it is understood that missing the smoky flavour will lose 1 point of awesomeness… but given the ingredients… a lower level of awesome is still going to be awesome!🤣 ty!

    I love your videos and because of you, we bought a multi-purpose grill with a smoker box. It charcoal grills, smokes, and has a gas grill attachment. Thanks to you we can do it all!
    I have followed you for years for a combination of your keto recipes and wonderful videos. It doesn’t matter whether it’s a recipe, or something else, I watch them all. My husband is not a fan of YouTube but when your videos are on the TV he will sit and watch every one of them.

  7. Steve, this is one of my favorite recipes of yours. 2 suggestions for your readers: 1. get the jalapeno pepper core thingies. They make seed removal a snap. 2. put the sausage wrapped peppers in the freezer for 30-60 mins (or over night). The frozen bundles of goodness are then easy to wrap with the bacon (you may want to add 30 minutes to the smoking time if they are frozen).

  8. Steve, do you have a ballpark number for the nutritional info.
    I tried listing each ingredient but stopped with the Jalapeño peppers which are high in carbs and sugar. Can you help?
