I’ve done a few recipes for these cottage cheese based protein crackers. While some are more complex, this 2 ingredient combo packs a great savory cheese flavor without the extra ingredients in my Better Cheddar clone recipe. Though the cooking time is long on these, it’s pretty low effort.

Ingredients

  • 1 cup full fat cottage cheese (225g) *see note below

  • 1/2 cup grated parmesan, lightly packed (25g) *see note below

Directions

  • Preheat oven to 225F or 107C.
  • In a small food processor or Nutribullet type blender, process the cottage cheese and parmesan until smooth like frosting, scraping down the sides as needed.
  • Portion 24 scoops of the mixture onto a baking sheet lined with a silicone mat. This works great with a #100 “disher” scoop, as it creates 24 uniform crackers that each are 2 teaspoons of the mixture. You will not need to flatten them.
  • Bake for 40 minutes, then rotate the baking sheet 180 degrees and bake for another 30 minutes or until crackers are just starting to brown on the edges. Turn off the oven and let the crackers continue to crisp up with the residual heat for another 30 minutes.
  • Crackers can be stored at room temperature in a zip-lock bag for at least a week, longer if you place a desiccant packet in the bag.

Notes

  • I’ve discovered that some brands of cottage cheese spread out and crisp up better than others. I find that the Kemp’s brand works wonderfully. If you find the brand you use doesn’t flatten out and crisp up, add 1 TB of heavy whipping cream to the cottage cheese when blending. I find this is necessary for the Daisy brand.
  • I have only used fresh grated parmesan in this recipe, so I can’t say if using canned grated parmesan (like Kraft) would work.
  • Macronutrients are based on a serving size of 6 crackers.

  2. Hi! I tried the Daisy CC trick with 1 T heavy whipping cream, they did not spread, therefore didn’t crisp. I cannot get Kemps in my area. What other brands have worked for you? Thanks.

    • I don’t know what to tell you. I made a batch yesterday with Daisy and 1TB heavy whipping cream and they spread out just fine for me. I’ve only used Kemps (no HWC) and Daisy (with HWC).
