Coq au vin over roasted garlic mashed cauliflower. Really delicious. The bones were even falling apart.

I remember seeing a recipe for this and was wanting to try it. As things go I ended up forgetting all about it. Seeing this sparked my memory and looks delicious.

I love coq au vin.  It's so easy to make and the flavor payoff is huge.
